Description
A pillowy, tender sugar cookie infused with fresh lime zest and topped with a tart lime glaze.
Ingredients
1/2 cup butter softened
1 cup sugar
1/4 tsp baking soda
1/4 tsp cream of tartar
1/4 tsp salt
1 egg
1/2 tsp vanilla
1 lime (juice and zest)
1 1/2 cups flour
1-2 drops green food coloring (optional)
1 tbsp butter melted (for glaze)
1 lime (juice for glaze)
1/4-1/3 cup powdered sugar (for glaze)
Instructions
Step 1: Preheat oven to 350°F and line a baking sheet with parchment paper.
Step 2: Cream softened butter and 1 cup sugar in a large bowl until fluffy.
Step 3: Mix in the egg, vanilla, and the zest/juice of one lime. Add food coloring if desired.
Step 4: Whisk together flour, baking soda, cream of tartar, and salt; gradually add to the wet mixture.
Step 5: Drop rounded tablespoons of dough onto the baking sheet and bake for 8-10 minutes.
Step 6: Let cookies cool completely before glazing.
Step 7: Mix melted butter, lime juice, and powdered sugar to create the glaze, then drizzle over cooled cookies.
Notes
Ensure the limes are at room temperature to get the most juice out of them. Chill the dough if it feels too sticky to handle.
