Description

This easy-to-make loaf combines the tangy flavor of sourdough with the rich, flaky layers of a croissant, resulting in a decadent bread perfect for breakfast or as a side dish.


Ingredients

  • Bread flour
  • Unsalted cold butter
  • Cold water
  • Active sourdough starter
  • Salt

Instructions

  1. Mix flour, cold water, sourdough starter, and salt in a large bowl until a soft, pliable dough forms. Let rest 45 minutes to 1 hour.
  2. Perform first stretch and fold by pulling and folding dough, adding half of grated cold butter as you fold.
  3. After 30 minutes, perform second stretch and fold incorporating remaining grated butter. Cover and rest 8-9 hours until dough doubles in size.
  4. Shape dough by folding corners and creating tension. Place in banneton or bowl, cover, and refrigerate 2 to 24 hours.
  5. Preheat oven to 450°F (232°C). Place chilled dough in cold Dutch oven, score top, bake 25 minutes with lid on.
  6. Remove lid and bake additional 20-22 minutes until golden brown.

Notes

Keep room temperature around 70°F (21°C) to prevent butter melting during fermentation. Use cold, grated butter for best results. Let dough ferment 8-10 hours for proper rise and flavor.
