This easy-to-make loaf combines the tangy flavor of sourdough with the rich, flaky layers of a croissant, resulting in a decadent bread perfect for breakfast or as a side dish.
Ingredients
- Bread flour
- Unsalted cold butter
- Cold water
- Active sourdough starter
- Salt
Instructions
- Mix flour, cold water, sourdough starter, and salt in a large bowl until a soft, pliable dough forms. Let rest 45 minutes to 1 hour.
- Perform first stretch and fold by pulling and folding dough, adding half of grated cold butter as you fold.
- After 30 minutes, perform second stretch and fold incorporating remaining grated butter. Cover and rest 8-9 hours until dough doubles in size.
- Shape dough by folding corners and creating tension. Place in banneton or bowl, cover, and refrigerate 2 to 24 hours.
- Preheat oven to 450°F (232°C). Place chilled dough in cold Dutch oven, score top, bake 25 minutes with lid on.
- Remove lid and bake additional 20-22 minutes until golden brown.
Notes
Keep room temperature around 70°F (21°C) to prevent butter melting during fermentation. Use cold, grated butter for best results. Let dough ferment 8-10 hours for proper rise and flavor.
