Instructions
- Feed your sourdough starter 12-24 hours before starting to ensure it’s active.
- In a large bowl, combine sourdough starter, warm water, and sugar; stir until sugar dissolves.
- Add bread flour, olive oil, and salt; mix until a shaggy dough forms.
- Cover bowl with damp towel; rest dough for 30-45 minutes.
- Perform stretch and fold technique to build dough structure.
- Cover and let dough rise overnight (8-10 hours) at room temperature until doubled in size.
- Transfer dough to floured surface; gently shape into a log and rest 10 minutes.
- Place dough in greased loaf pan; cover and let rise 1-2 hours until doubled.
- Preheat oven to 375°F; bake bread 40 minutes until golden and hollow-sounding when tapped.
- Cool bread at least 1 hour before slicing to prevent deflating.
Notes
Use a freshly fed active starter for best rise and flavor. Measure flour with a kitchen scale for accuracy. Rise times vary with temperature; warmer rooms speed up rising. Tap loaf to check doneness; a hollow sound means it’s baked through. Cover bread while cooling for a softer crust.
