Ingredients
10 lbs pork chitterlings
2 large onions, halved
4 cloves garlic, smashed
1 green bell pepper, quartered
1 large potato, peeled and chunked
1/2 cup apple cider vinegar
2 tbsp red pepper flakes
1 tbsp salt
1 tsp black pepper
Water to cover
Instructions
Step 1: Clean the chitterlings thoroughly in a sink of cold water, removing all membranes and debris.
Step 2: Repeat the rinsing process five times or until the water remains completely clear.
Step 3: Place cleaned meat in a large stockpot and cover with 2 inches of fresh water.
Step 4: Add onions, garlic, bell pepper, potato, vinegar, and all seasonings to the pot.
Step 5: Bring to a rolling boil over medium-high heat.
Step 6: Reduce heat to low, cover, and simmer for 3.5 to 4 hours until the meat is fork-tender.
Step 7: Remove large vegetable pieces and the potato before serving hot with broth.
