Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 cup corn kernels (fresh, frozen, or canned)
- For the Honey Butter:
- 1/2 cup unsalted butter, softened
- 1/4 cup honey
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
Instructions
- Preheat your oven to 400°F (200°C). Grease a mini muffin tin or line it with mini muffin liners.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, melted butter, and eggs until smooth.
- Pour the wet mixture into the dry mixture and stir until just combined. Fold in corn kernels.
- Spoon batter into muffin tin, filling each about 2/3 full.
- Bake for 10–12 minutes until golden brown and a toothpick comes out clean.
- While baking, mix softened butter, honey, cinnamon (if using), and a pinch of salt until creamy.
- Cool poppers slightly, then drizzle or spread with honey butter before serving.
Notes
Try mixing in shredded cheese, jalapeños, or fresh herbs like thyme for extra flavor. Store leftovers in an airtight container for up to 2 days or freeze up to 3 months. Reheat in oven at 350°F for 5–7 minutes or microwave for 15–20 seconds.
