Description

This classic Southern-style peach pudding features sweet, juicy peaches baked in a rich, buttery custard, topped with a golden, crumbly crust.


Ingredients

6 large ripe peaches, peeled, pitted, and sliced (about 6 cups)
1/2 cup (1 stick) unsalted butter, melted, plus more for greasing
1 1/2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk (whole or 2%)
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon (optional)
1/4 teaspoon ground nutmeg (optional)
Vanilla ice cream or whipped cream, for serving


Instructions

Step 1: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter.
Step 2: Arrange the sliced peaches evenly in the bottom of the prepared baking dish.
Step 3: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
Step 4: In a separate small bowl, whisk together the milk and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until just combined, forming a thick batter. Do not overmix.
Step 5: Pour the melted butter evenly over the peaches in the baking dish. Do not stir.
Step 6: Spoon the batter over the melted butter and peaches. Again, do not stir. The batter will spread as it bakes.
Step 7: If using, sprinkle the ground cinnamon and nutmeg evenly over the top of the batter.
Step 8: Bake for 45-55 minutes, or until the topping is golden brown and a toothpick inserted into the center comes out clean. The peach filling should be bubbly.
Step 9: Remove from oven and let cool for 10-15 minutes before serving warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes

For an extra layer of flavor, you can add a tablespoon of bourbon to the peach mixture. If using frozen peaches, ensure they are thawed and well-drained to prevent the pudding from becoming watery. Serve warm with vanilla ice cream for the ultimate experience!
