Description

These incredibly quick and flavorful chicken bites are coated in a rich garlic butter sauce, perfect for a busy weeknight meal or an easy appetizer.


Ingredients

1.5 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
1/2 tsp salt
1/4 tsp black pepper
1/2 tsp smoked paprika
2 tbsp olive oil
4 tbsp unsalted butter
4 cloves garlic, minced
1 tsp Italian seasoning
2 tbsp fresh parsley, chopped (optional)
1 tbsp lemon juice (optional)


Instructions

Step 1: Pat the chicken pieces thoroughly dry with paper towels. In a medium bowl, toss the chicken with salt, black pepper, and smoked paprika until evenly coated.
Step 2: Heat the olive oil in a large nonstick skillet or cast-iron pan over medium-high heat until shimmering.
Step 3: Add the seasoned chicken to the hot skillet in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary). Cook undisturbed for 4-5 minutes until golden brown.
Step 4: Flip the chicken pieces and cook for another 3-4 minutes on the other side, or until cooked through and juices run clear. Remove the chicken from the skillet and set aside on a plate.
Step 5: Reduce the heat to medium. Add the butter to the skillet and let it melt. Once melted and slightly foamy, add the minced garlic and Italian seasoning. Cook, stirring constantly, for about 45 seconds until fragrant (do not let the garlic brown).
Step 6: Return the cooked chicken to the skillet. Toss the chicken in the garlic butter sauce until each piece is well coated.
Step 7: Remove from heat. Stir in the fresh chopped parsley and a squeeze of fresh lemon juice, if using. Serve immediately and enjoy your speedy garlic butter chicken bites!

Notes
