Spiced Apple Cranberry Pancakes

Description

Fluffy, golden-brown pancakes infused with warm autumn spices, grated tart apples, and zesty cranberries.


Ingredients

2 cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups milk
1 large egg
3 tablespoons unsalted butter, melted
1 cup Granny Smith apple, peeled and grated
1/2 cup fresh or frozen cranberries, roughly chopped
1 teaspoon vanilla extract


Instructions

Step 1: In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined for the spiced apple cranberry pancakes base.
Step 2: In a separate medium bowl, whisk the milk, egg, melted butter, and vanilla extract until smooth.
Step 3: Make a well in the center of the dry ingredients and pour in the wet ingredients. Stir with a spatula until just combined; the spiced apple cranberry pancakes batter should still be slightly lumpy.
Step 4: Gently fold in the grated apples and the chopped cranberries into the spiced apple cranberry pancakes mixture.
Step 5: Heat a large non-stick griddle or skillet over medium heat and lightly grease with butter or cooking spray.
Step 6: Scoop 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes.
Step 7: Flip the spiced apple cranberry pancakes carefully and cook the other side until golden brown and cooked through, about 2-3 minutes more.
Step 8: Serve the spiced apple cranberry pancakes warm with maple syrup and extra fruit if desired.

Notes

Grating the apples allows them to cook quickly and integrate perfectly with the batter. If using frozen cranberries, do not thaw them before adding.
