Elegant and cozy spiced apple pecan tartlets featuring a buttery crust, cinnamon-spiced apple filling, and a crunchy toasted pecan topping.
Ingredients
2 cups all-purpose flour
3/4 cup cold unsalted butter, cubed
1/4 cup ice water
1/2 teaspoon salt
3 large Granny Smith apples, peeled and finely diced
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup pecans, chopped and lightly toasted
1 tablespoon lemon juice
2 tablespoons unsalted butter (for filling)
Instructions
Step 1: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry cutter until the mixture resembles coarse crumbs.
Step 2: Gradually add ice water, one tablespoon at a time, mixing until the dough just starts to come together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
Step 3: While the dough chills, melt 2 tablespoons of butter in a skillet over medium heat. Add the diced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Cook for 5-7 minutes until apples are slightly tender. Stir in the toasted pecans and set aside to cool.
Step 4: Preheat your oven to 375°F (190°C). Roll out the chilled dough on a lightly floured surface to about 1/8-inch thickness.
Step 5: Use a circular cutter to cut out rounds and press them into a greased muffin tin or tartlet pans. Prick the bottoms with a fork.
Step 6: Fill each pastry shell with the spiced apple pecan mixture. Bake for 20-25 minutes, or until the pastry is golden brown. Cool slightly before removing from the tin.
Notes
Ensure the apple filling has cooled completely before adding it to the raw pastry to prevent the dough from becoming soggy.
