Description
A decadent and moist loaf cake filled with fresh carrots, sweet dates, and warm spices, finished with a luscious maple cream cheese frosting.
Ingredients
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1.5 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp ground nutmeg
1/2 tsp salt
2 large eggs
3/4 cup brown sugar
1/2 cup granulated sugar
1/2 cup vegetable oil
1 tsp vanilla extract
2 cups grated carrots
1 cup chopped Medjool dates
1/2 cup chopped walnuts (optional)
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
3 tbsp pure maple syrup
1 cup powdered sugar
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan, or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
Step 3: In a large bowl, beat the eggs with the brown sugar and granulated sugar until well combined. Gradually whisk in the oil and vanilla extract.
Step 4: Fold in the grated carrots and chopped dates into the wet mixture until evenly distributed.
Step 5: Gently fold the dry ingredients into the wet ingredients using a spatula, being careful not to over-mix. Fold in the walnuts if using.
Step 6: Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick comes out clean.
Step 7: While the loaf cools, prepare the maple cream by beating the cream cheese, butter, maple syrup, and powdered sugar until smooth and fluffy.
Step 8: Once the spiced carrot date loaf is completely cool, spread the maple cream over the top and serve.
Notes
Ensure the cream cheese is at room temperature to avoid lumps in your maple cream.
