Description

A warm, comforting autumn dessert featuring tart cranberries and sweet apples tossed in festive spices, topped with a buttery, golden biscuit crust.

5-6 large Granny Smith apples, peeled and sliced
1.5 cups fresh or frozen cranberries
3/4 cup granulated sugar
1/4 cup light brown sugar
2 tablespoons cornstarch
1.5 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 teaspoon vanilla extract
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
3/4 cup buttermilk
1 tablespoon turbinado sugar (for topping)


Instructions

Step 1: Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
Step 2: In a large bowl, combine the sliced apples, cranberries, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, ginger, and vanilla. Toss thoroughly to coat the fruit.
Step 3: Pour the fruit mixture into the prepared baking dish and spread it out evenly.
Step 4: In another bowl, whisk together the flour, baking powder, and salt. Use a pastry cutter or your fingers to work the cold butter into the flour until it resembles coarse crumbs.
Step 5: Gently stir in the buttermilk until a soft dough forms. Do not overmix.
Step 6: Drop spoonfuls of the dough over the fruit mixture, leaving small gaps for steam to escape.
Step 7: Sprinkle the top of the dough with turbinado sugar.
Step 8: Bake for 40-45 minutes, or until the fruit is bubbling and the biscuit topping is golden brown.
Step 9: Allow the spiced cranberry apple cobbler to cool for at least 15 minutes before serving to let the sauce thicken.

Notes

Use cold butter for the fluffiest biscuit topping and Granny Smith apples for the best structural integrity.
