Ingredients
1 batch shortcrust pastry dough
3 large Bosc pears, peeled, cored, and sliced
1 cup fresh or frozen cranberries
1/2 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cardamom
1 teaspoon orange zest
1 tablespoon lemon juice
1/4 cup apricot jam (for glaze, optional)
Instructions
Step 1: Preheat your oven to 375°F (190°C). Roll out the chilled pastry dough on a floured surface and fit it into a 9-inch tart pan, trimming any excess from the edges.
Step 2: In a large bowl, gently toss the sliced pears and cranberries with sugar, cornstarch, lemon juice, orange zest, and the spices (cinnamon, ginger, and cardamom) until the fruit is evenly coated.
Step 3: Arrange the pear slices in the tart shell in an overlapping circular pattern. Fill in the gaps with the cranberries, ensuring an even distribution of the fruit throughout the spiced cranberry pear tart.
Step 4: Place the tart on a baking sheet and bake for 40-45 minutes, or until the pastry is golden brown and the fruit filling is bubbling.
Step 5: Remove from the oven and let cool. If using, heat the apricot jam and brush it over the warm fruit for a glossy finish.
Step 6: Allow the spiced cranberry pear tart to cool completely before removing it from the pan and slicing.
Notes
Ensure pears are ripe but firm; Bosc pears work best because they hold their shape. Do not skip the chilling time for the dough.
