Ingredients
10 oz frozen chopped spinach (thawed and well-drained)
4 oz cream cheese (softened)
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup Knorr Vegetable Recipe Mix
1/2 cup bacon pieces
4 oz water chestnuts (chopped)
4 spinach flour tortillas
Instructions
Step 1: Thaw the frozen spinach and squeeze it in a kitchen towel until all excess liquid is removed.
Step 2: Chop the water chestnuts into small, uniform pieces.
Step 3: In a large bowl, whisk together the softened cream cheese, mayonnaise, and sour cream until smooth.
Step 4: Add the Knorr Vegetable Recipe Mix, drained spinach, bacon pieces, and chopped water chestnuts to the bowl; fold together until combined.
Step 5: Lay out the tortillas and spread the spinach mixture evenly over each one, leaving a small border.
Step 6: Roll each tortilla tightly and wrap in plastic wrap.
Step 7: Refrigerate for at least 1 hour to allow the rolls to firm up.
Step 8: Unwrap and slice each roll into 6 equal pinwheels using a serrated knife.
Notes
Ensure the spinach is bone-dry to avoid soggy pinwheels. For a lighter version, use Greek yogurt instead of sour cream.
