Ingredients
2 cups fresh spinach, chopped
1 cup crumbled feta cheese
1/2 cup breadcrumbs
1/4 cup all-purpose flour
2 large eggs
1/4 cup fresh parsley, chopped
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
Tzatziki sauce for serving (optional)
Fresh lemon wedges for garnish (optional)
Instructions
Step 1: In a large bowl, combine the chopped spinach, crumbled feta cheese, breadcrumbs, flour, eggs, chopped fresh parsley, salt, and black pepper. Mix well until fully combined.
Step 2: Form the mixture into small patties, about 2 inches in diameter and roughly 1/2 inch thick.
