A moist, delicious quick bread that combines sweet mashed bananas with juicy fresh strawberries.
Ingredients
3 ripe bananas, mashed
1 cup fresh strawberries, diced
1/2 cup unsalted butter, melted
3/4 cup granulated sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all-purpose flour
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
Step 2: In a large bowl, mash the bananas until smooth and stir in the melted butter.
Step 3: Add the sugar, egg, and vanilla, whisking until well incorporated.
Step 4: Sprinkle the baking soda and salt over the mixture, then stir in the flour until just combined.
Step 5: Toss the strawberries in a little flour, then gently fold them into the batter.
Step 6: Pour batter into the pan and bake for 60 minutes or until a toothpick comes out clean.
Step 7: Cool in the pan for 10 minutes before removing to a wire rack.
