Ingredients
6 small flour tortillas
1/2 cup granulated sugar
1 tbsp ground cinnamon
1/2 cup unsalted butter, melted
8 oz cream cheese, softened
1/2 cup powdered sugar
1 tsp vanilla extract
1/2 cup heavy whipping cream
1 cup fresh strawberries, diced
Instructions
Step 1: Preheat oven to 375°F (190°C) and prepare an upside-down muffin tin on a baking sheet.
Step 2: Brush tortillas with melted butter and coat thoroughly in a mixture of cinnamon and granulated sugar.
Step 3: Place tortillas between muffin tin humps to form taco shapes and bake for 8-10 minutes until crisp.
Step 4: Beat cream cheese, powdered sugar, and vanilla until smooth; in a separate bowl, whip heavy cream to stiff peaks and fold into the cheese mixture.
Step 5: Pipe the chilled cheesecake filling into the cooled shells and top with a generous amount of diced strawberries.
Notes
