Description
Indulgently soft and fluffy rolls filled with a fresh strawberry reduction and topped with a velvety cream cheese frosting.
Ingredients
260 ml (1 cup) warm milk
10 g (1 tbsp) instant dry yeast
540 g (4 ¼ cups) all-purpose flour
65 g (â…“ cup) granulated sugar
1 tsp salt
1 large egg, room temperature
80 g (â…“ cup) unsalted butter, very soft
250 g (1 ¾ cups) fresh or frozen strawberries
50 g (¼ cup) granulated sugar (for filling)
Juice of half a lemon
100 g (½ cup) cream cheese, softened
40 g (3 tbsp) unsalted butter, softened
Instructions
Step 1: Mix the warm milk and yeast in a stand mixer bowl; let stand for 5 minutes until foamy.
Step 2: Add sugar, salt, egg, and soft butter, then gradually mix in flour until dough forms.
Step 3: Knead the dough for 7 minutes on medium speed until smooth and elastic, then let rise for 1 hour.
Step 4: Cook chopped strawberries, sugar, and lemon juice in a pan until thickened, then cool.
Step 5: Roll dough into a rectangle, spread the strawberry filling, roll up tightly, and cut into 12 pieces.
Step 6: Place rolls in a greased pan, let rise for 30 minutes, then bake at 350°F for 25 minutes.
Step 7: Whisk cream cheese and butter together, then frost the rolls while still warm.

Ensure the strawberry filling is completely cooled before spreading to prevent dough from tearing.
