Ingredients

  • Butter
  • All-purpose flour
  • Old-fashioned oats
  • Granulated sugar
  • Light brown sugar
  • Salt
  • Fresh strawberries
  • Lemon juice
  • Cornstarch

Instructions

  1. Preheat oven to 350°F. Line an 8-inch square pan with aluminum foil and spray with cooking spray.
  2. In a large microwave-safe bowl, melt butter. Add flour, oats, granulated sugar, brown sugar, and salt. Stir until combined, leaving some larger clumps.
  3. Set aside about 1 cup of crumble mixture. Press remaining mixture firmly into prepared pan to form crust.
  4. In a mixing bowl, combine chopped strawberries, granulated sugar, lemon juice, and cornstarch. Stir to coat evenly.
  5. Pour strawberry mixture over crust in pan.
  6. Sprinkle reserved crumble mixture over strawberry filling, pressing gently to form larger crumble pieces.
  7. Bake about 50 minutes, until edges are golden and center is set with bubbly filling.
  8. Cool at least 1 hour before slicing into squares to ensure bars set properly.

Notes

Avoid overmixing crumble mixture to keep texture rustic. Watch baking time as juicy strawberries may require longer baking. Allow bars to cool completely before slicing to prevent them from falling apart.
