Description

A thick, chewy sugar cookie stuffed with strawberry jam and finished with a classic hard glaze and sprinkles.


Ingredients

2 cups All-Purpose Flour
1 teaspoon Baking Soda
1 cup Unsalted Butter (softened)
3/4 cup Granulated Sugar
1 Large Egg
1 teaspoon Vanilla Extract
1/2 cup Strawberry Jam
1 cup Powdered Sugar
2 tablespoons Whole Milk
1 tablespoon Rainbow Sprinkles


Instructions

Step 1: Preheat your oven to 350°F and prepare your baking sheets with parchment paper.
Step 2: Cream the butter and sugar together in a mixer until very light and airy.
Step 3: Mix in the egg and vanilla, then slowly incorporate the 2 cups All-Purpose Flour and 1 teaspoon Baking Soda.
Step 4: Roll the dough out and cut into twelve pairs of rectangles.
Step 5: Place jam in the center of twelve rectangles, top with the remaining twelve, and crimp the edges with a fork.
Step 6: Bake for 10-12 minutes until the edges are set but not browned.
Step 7: Once cool, whisk the milk and powdered sugar to make the icing, spread over the cookies, and add sprinkles.

Notes

Ensure jam is room temperature before filling to avoid dough tearing.
