Ingredients
1 lb fresh strawberries, hulled and sliced
1/3 cup granulated sugar
1 tablespoon fresh lemon juice
1 teaspoon vanilla extract
1 tablespoon cornstarch
2 tablespoons cold water
Instructions
Step 1: In a medium saucepan, combine the sliced strawberries, granulated sugar, and fresh lemon juice.
Step 2: Place the saucepan over medium heat and stir occasionally. Cook for about 5-7 minutes until the strawberries have softened and released their natural juices.
Step 3: In a small bowl, whisk together the cornstarch and cold water until smooth to create a slurry.
Step 4: Slowly pour the cornstarch slurry into the simmering strawberry mixture while stirring constantly. Continue to cook for another 1-2 minutes until the sauce thickens and becomes clear and glossy. Remove from heat and stir in the vanilla extract. Leave it to cool before serving.
Notes
For a smoother texture, you can pulse the finished sauce in a blender. If using frozen berries, increase the cooking time by 3-4 minutes.
