Ingredients
8 oz cream cheese, softened
1 3/4 cups powdered sugar
3/4 cup crushed vanilla wafers
1/4 cup freeze-dried strawberry crumbs
1 teaspoon vanilla extract
1 pinch salt
12 oz white melting wafers
2 tablespoons additional freeze-dried strawberry crumbs for topping
2 oz white chocolate tinted pink for drizzle
Instructions
Step 1: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
Step 2: Gradually add the powdered sugar, vanilla extract, and salt, beating until well combined.
Step 3: Fold in the crushed vanilla wafers and 1/4 cup of strawberry crumbs until the mixture is uniform and thick.
Step 4: Shape the mixture into 18 small egg shapes (about 1.5 inches long) and place them on a parchment-lined baking sheet.
Step 5: Chill the eggs in the refrigerator for at least 2 hours or until very firm.
Step 6: Melt the white wafers in the microwave in 30-second bursts, stirring until smooth. Dip each egg using a fork, letting excess chocolate drip off.
Step 7: Return to the tray, sprinkle with extra strawberry crumbs, and drizzle with pink chocolate if desired. Let set completely before serving.
Notes
Ensure the cream cheese is brick-style and full fat for the best results. Using a fork for dipping helps create a cleaner finish.
