Description

Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ cup sugar
  • 2 large eggs
  • ½ cup yogurt or sour cream
  • ⅓ cup oil or melted butter
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, chopped

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line an 8×8 inch baking dish.
  2. In a bowl, whisk together eggs, sugar, yogurt (or sour cream), oil, and vanilla until smooth.
  3. Add flour, baking powder, and baking soda; stir until just combined without overmixing.
  4. Gently fold in chopped strawberries, being careful not to crush them.
  5. Pour batter into prepared pan and smooth the top; optionally add extra strawberry slices on top.
  6. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before slicing into squares or bars.

Notes

Use fresh or thawed frozen strawberries. Avoid overmixing batter for a tender crumb. Store in airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
