- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¾ cup sugar
- 2 large eggs
- ½ cup yogurt or sour cream
- ⅓ cup oil or melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, chopped
Instructions
- Preheat oven to 350°F (175°C) and grease or line an 8×8 inch baking dish.
- In a bowl, whisk together eggs, sugar, yogurt (or sour cream), oil, and vanilla until smooth.
- Add flour, baking powder, and baking soda; stir until just combined without overmixing.
- Gently fold in chopped strawberries, being careful not to crush them.
- Pour batter into prepared pan and smooth the top; optionally add extra strawberry slices on top.
- Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool slightly before slicing into squares or bars.
Notes
Use fresh or thawed frozen strawberries. Avoid overmixing batter for a tender crumb. Store in airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
