Ingredients
1 lb boneless, skinless chicken breasts
1 cup uncooked rice (white or brown)
1 can (15 oz) corn, drained (or 2 cups fresh corn)
1 avocado, diced
1/2 cup crumbled feta cheese (optional)
1/4 cup fresh cilantro, chopped
Juice of 1 lime
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
Salt to taste
Pepper to taste
Instructions
Step 1: In a pot, cook the rice according to package instructions. Set aside when done.
Step 2: While the rice is cooking, season the chicken breasts with chili powder, cumin, salt, and pepper.
Step 3: In a large skillet, heat olive oil over medium heat. Add the seasoned chicken and cook for about 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let it rest for a few minutes before slicing.
Step 4: In the same skillet, add the drained corn and sauté for 2-3 minutes until heated through and slightly charred. Add lime juice and mix well.
Step 5: In serving bowls, layer the cooked rice, sliced chicken, sautéed corn, and diced avocado.
Step 6: Sprinkle with crumbled feta cheese (if using) and fresh cilantro.
