Bite-sized, buttery sugar cookie cups filled with a rich and tangy cream cheese buttercream frosting.
Ingredients
3/4 cup salted butter softened
3/4 cup granulated sugar
1 large egg
1 1/2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
sprinkles for topping
2 ounces cream cheese softened
3 cups powdered sugar
1/4 cup butter
2 tablespoons milk
1/4 teaspoon vanilla extract
pink or red food coloring gel optional
Instructions
Step 1: Preheat oven to 350°F and grease a mini muffin tin.
Step 2: Cream 3/4 cup salted butter and 3/4 cup sugar until fluffy.
Step 3: Mix in the egg, 1 1/2 tsp vanilla, and 1/2 tsp almond extract.
Step 4: Stir in 2 cups flour, 1 tsp baking powder, and 1/2 tsp baking soda.
Step 5: Roll dough into 1-inch balls and place in muffin tin cavities.
Step 6: Bake for 10-12 minutes until edges are set.
Step 7: Use a spoon to press wells into the warm cookies; let cool.
Step 8: Whip frosting ingredients (cream cheese, butter, powdered sugar, milk, vanilla) until smooth.
Step 9: Pipe frosting into cooled cups and add sprinkles.
