- 1 (8 oz) package cream cheese, softened
- 1/4 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup fresh cranberries
- 1/4 cup granulated sugar (for cranberries)
- 1 tbsp water
- 1/4 cup whipped cream
- 1/4 cup fresh cranberries (for topping)
- Fresh mint leaves (optional)
- Powdered sugar (optional)
Instructions
- Prepare the Crust: Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners. In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared muffin tin.
- Prepare the Cheesecake Filling: In a bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the egg and vanilla extract, mixing well after each addition. Spoon the cheesecake filling over the crust.
- Prepare the Sugared Cranberries: In a saucepan, combine the cranberries, granulated sugar, and water. Cook over medium heat until the sugar dissolves and the cranberries are coated. Let them cool.
- Assemble the Cheesecake Bites: Top the cheesecake filling with the sugared cranberries.
- Bake the Cheesecake Bites: Bake for 15-20 minutes, or until the filling is set.
