  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup fresh cranberries
  • 1/4 cup granulated sugar (for cranberries)
  • 1 tbsp water
  • 1/4 cup whipped cream
  • 1/4 cup fresh cranberries (for topping)
  • Fresh mint leaves (optional)
  • Powdered sugar (optional)

Instructions

  1. Prepare the Crust: Preheat the oven to 350°F (175°C) and line a mini muffin tin with liners. In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared muffin tin.
  2. Prepare the Cheesecake Filling: In a bowl, beat the cream cheese and granulated sugar until smooth and creamy. Add the egg and vanilla extract, mixing well after each addition. Spoon the cheesecake filling over the crust.
