Description
A quick, flavorful meal featuring pan-fried halloumi glazed in sweet chili sauce, fresh vegetables, and creamy lime-coriander tzatziki, all wrapped in a warm tortilla.
Ingredients
250g halloumi cheese, sliced into 8-10 pieces
1/4 cup (60ml) sweet chili sauce
1/2 cup (120g) Greek yogurt
1 tablespoon fresh lime juice
2 tablespoons fresh coriander, chopped
1/2 cucumber, deseeded and sliced thinly or diced
2 baby gem lettuce, shredded
1 medium carrot, grated
4 large tortilla wraps
1 tablespoon rapeseed oil (or olive oil)
Salt and black pepper to taste
Instructions
Step 1: Prepare the Tzatziki: In a small bowl, combine Greek yogurt, fresh lime juice, and chopped coriander. Season with a pinch of salt and pepper. Mix well and set aside to chill.
Step 2: Slice the Halloumi: Carefully slice the block of halloumi cheese into even pieces, about 1/4-inch thick. This ensures even cooking.
Step 3: Marinate Halloumi: In a shallow dish, coat the halloumi slices with the sweet chili sauce, ensuring all pieces are well covered. Let it marinate for at least 5-10 minutes while you prepare the vegetables.
Step 4: Cook the Halloumi: Heat rapeseed oil in a large non-stick frying pan over medium-high heat. Once hot, add the marinated halloumi slices in a single layer. Fry for 2-3 minutes per side, or until golden brown and slightly crispy with a caramelized glaze.
Step 5: Prepare Vegetables: While the halloumi cooks, thinly slice the cucumber, shred the baby gem lettuce, and grate the carrot. Arrange them for easy assembly.
Step 6: Warm the Wraps: Gently warm the tortilla wraps in a dry pan, microwave, or oven for a few seconds until they are soft and pliable. This makes them easier to roll.
Step 7: Assemble the Wraps: Lay each warm tortilla flat. Spread a generous spoonful of the prepared tzatziki down the center. Layer with shredded lettuce, sliced cucumber, and grated carrot. Top with 2-3 slices of the cooked sweet chili halloumi.
Step 8: Serve: Fold in the sides of the tortilla, then roll it up tightly from the bottom. Serve immediately and enjoy your quick and flavorful Sweet Chili Halloumi Wraps!
Notes
For an extra kick, add a dash of sriracha to your sweet chili sauce or directly into the tzatziki. You can also toast the assembled wraps in a dry pan for a minute or two per side for a crispier exterior.
