Description

A hearty, one-pan meal featuring savory chicken sausage, sweet caramelized potatoes, and tart autumn apples.


Ingredients

Scale

1 lb chicken apple sausage, sliced into rounds
2 large sweet potatoes, cubed into 1/2 inch pieces
2 medium apples (Honeycrisp or Granny Smith), sliced
1 medium red onion, diced
2 tablespoons olive oil
1 teaspoon dried rosemary
1/2 teaspoon ground cinnamon
Salt and pepper to taste
2 cups fresh kale, chopped (optional)
1/4 cup chicken broth or water


Instructions

Step 1: Heat olive oil in a large skillet over medium-high heat. Add the sliced sausage and cook until browned on both sides, about 5-7 minutes. Remove sausage from the skillet and set aside.
Step 2: In the same skillet, add the cubed sweet potatoes. If the pan is dry, add another tablespoon of oil. Cook for 8-10 minutes, stirring occasionally, until the sweet potatoes are tender and golden brown.
Step 3: Add the diced red onion and sliced apples to the skillet with the sweet potatoes. Pour in the chicken broth to help soften the vegetables. Cook for another 5-6 minutes until the onions are translucent and apples have softened.
Step 4: Stir in the rosemary, cinnamon, salt, and pepper. If using kale, add it now and toss until wilted.
Step 5: Return the browned sausage to the skillet and toss everything together for 2 minutes to heat through. Serve your sweet potato apple and sausage skillet immediately.

Notes

Ensure sweet potatoes are cut small for faster cooking. Use a cast iron skillet for the best caramelization.
