Description

A decadent and moist cake infused with sweet potato puree and rich bourbon caramel sauce, topped with crunchy nuts and granola, perfect for any occasion.

Ingredients

Scale

2 cups all-purpose flour
1/2 cup granulated sugar
1 tbsp baking powder
1 tsp ground cinnamon
1/2 tsp salt
1/2 cup unsalted butter, softened
2 eggs
1 cup milk
1 tsp vanilla extract
1/2 cup sweet potato puree
1/4 cup bourbon caramel sauce
1/4 cup chopped nuts (such as almonds or walnuts)
1/4 cup granola
Fresh berries (optional, for garnish)
Caramel drizzle (optional, for garnish)

Instructions

Step 1: In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt. Whisk until well combined, ensuring no lumps.
Step 2: In a separate medium bowl, whisk together the softened butter, eggs, milk, vanilla extract, sweet potato puree, and bourbon caramel sauce until smooth and fully incorporated.
Step 3: Gradually add the wet ingredients to the dry ingredients, mixing with a spatula or spoon until just combined. Be careful not to overmix the batter.
Step 4: Pour the batter evenly into a greased baking dish (an 8x8 inch or 9x9 inch pan works well).
Step 5: Bake in a preheated oven at 350°F (175°C) for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Step 6: Remove the cake from the oven and let it cool slightly in the dish on a wire rack.
Step 7: Garnish the warm cake generously with chopped nuts, granola, fresh berries, and an additional caramel drizzle, if desired. Serve immediately and enjoy your decadent Sweet Potato & Bourbon Caramel Cake!

Notes

For an extra rich flavor, consider using dark brown sugar in your homemade caramel sauce. You can also add a pinch of nutmeg or allspice to the cake batter for more warming spices. Ensure your sweet potato puree is smooth for the best cake texture.
