Description

A moist, spiced, and decadent dessert bar made with roasted sweet potatoes and rich dark brown sugar.


Ingredients

1 cup sweet potato puree (roasted and mashed)
1/2 cup unsalted butter, softened
1 cup dark brown sugar, packed
1 large egg, room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 teaspoon baking soda
1/2 teaspoon salt


Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease an 8x8 inch baking pan or line it with parchment paper for easy removal.
Step 2: In a large mixing bowl, cream together the softened butter and dark brown sugar until the mixture is light and fluffy, about 2-3 minutes.
Step 3: Beat in the egg and vanilla extract until well combined, then fold in the smooth sweet potato puree.
Step 4: In a separate medium bowl, whisk together the flour, cinnamon, ginger, nutmeg, baking soda, and salt.
Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Do not over-mix.
Step 6: Spread the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick comes out clean.
Step 7: Allow the sweet potato brown sugar bars to cool completely in the pan before slicing into squares.

Notes

For the best flavor, roast fresh sweet potatoes at 400°F until tender before mashing into a puree.
