Sweet Potato Brown Sugar Donuts

Description

Deliciously moist and spiced baked donuts made with real sweet potato and coated in a crunchy brown sugar and cinnamon topping.


Ingredients

1 cup sweet potato puree (roasted and mashed)
2 cups all-purpose flour
3/4 cup dark brown sugar, packed
1 1/2 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/2 tsp salt
2 large eggs, room temperature
1/3 cup melted unsalted butter
1/2 cup whole milk
1 tsp vanilla extract
Extra melted butter and brown sugar for topping


Instructions

Step 1: Preheat your oven to 350°F (175°C) and generously grease a 12-count donut pan with non-stick spray or butter.
Step 2: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
Step 3: In a separate bowl, mix the sweet potato puree, dark brown sugar, eggs, melted butter, milk, and vanilla extract until smooth.
Step 4: Gradually fold the wet ingredients into the dry ingredients until just combined; be careful not to overmix the batter for these sweet potato brown sugar donuts.
Step 5: Pipe the batter into the prepared donut pan, filling each cavity about 3/4 full, and bake for 12-15 minutes or until a toothpick comes out clean.
Step 6: Allow the donuts to cool for 5 minutes in the pan before transferring to a wire rack. While still warm, dip each of the sweet potato brown sugar donuts in melted butter and roll in brown sugar.

Notes

Ensure the sweet potato is mashed very smooth to avoid lumps in the donut texture. For best results, use dark brown sugar for the coating.
