Description

A rich, velvety Southern-style sweet potato pie made with sweetened condensed milk for a perfectly smooth texture.


Ingredients

2 cups roasted sweet potato puree
14 oz sweetened condensed milk
2 large eggs
1/2 cup unsalted butter, melted
1 tsp pure vanilla extract
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/2 tsp salt
1 unbaked 9-inch deep-dish pie crust


Instructions

Step 1: Preheat oven to 400°F and roast sweet potatoes until tender, then peel and puree until smooth.
Step 2: Reduce oven heat to 350°F and prepare your pie crust in a deep-dish plate.
Step 3: In a large bowl, whisk together the puree and melted butter.
Step 4: Add the condensed milk, eggs, vanilla, and spices; mix until completely smooth.
Step 5: Pour the batter into the crust and bake for 45 minutes until set.
Step 6: Cool on a wire rack for at least 4 hours before serving.

Notes

Always roast the potatoes instead of boiling to prevent a watery filling.
