Description

Unlock irresistible flavor with these tender, fall-off-the-bone country-style pork ribs, infused with the unique sweetness of Dr Pepper and a smoky, caramelized glaze.

3-4 lbs country-style pork ribs
2 tbsp brown sugar
1 tbsp smoked paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp salt
1 tsp black pepper
1/2 tsp cayenne pepper (optional)
1 large onion, roughly chopped
4-5 cloves garlic, smashed
2 (12 oz) cans Dr Pepper soda
1 cup your favorite BBQ sauce
2 tbsp apple cider vinegar
1 tbsp Worcestershire sauce
1 tbsp vegetable oil (for searing, optional)


Instructions

Step 1: Prepare the Dry Rub: In a small bowl, combine brown sugar, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Mix well.
Step 2: Season the Ribs: Pat the country-style pork ribs dry with paper towels. Generously rub the dry rub mixture all over the ribs, ensuring they are fully coated.
Step 3: Sear the Ribs (Optional but Recommended): In a large Dutch oven or oven-safe pot, heat a tablespoon of oil over medium-high heat. Sear the ribs in batches until browned on all sides, about 2-3 minutes per side. Remove ribs and set aside.
Step 4: Build the Braising Liquid: Add chopped onion and smashed garlic to the pot, sautéing for 3-5 minutes until softened. Deglaze the pot with a splash of Dr Pepper, scraping up any browned bits.
Step 5: Braise in Dr Pepper: Return the seared ribs to the pot. Pour in the remaining Dr Pepper until the ribs are mostly submerged. Add apple cider vinegar and Worcestershire sauce. Bring to a gentle simmer.
Step 6: Oven Cook: Cover the Dutch oven tightly with a lid or aluminum foil. Transfer to a preheated oven at 300°F (150°C) and cook for 2.5 to 3 hours, or until the ribs are very tender and easily pull apart with a fork.
Step 7: Prepare the Glaze: While ribs are braising, combine your favorite BBQ sauce with about 1/4 cup of the braising liquid from the pot (once it's cooked a bit and flavorful). Whisk well.
Step 8: Finish and Glaze: Carefully remove the ribs from the braising liquid and place them on a foil-lined baking sheet or directly onto a preheated grill. Brush generously with the BBQ sauce glaze.
Step 9: Caramelize: Grill over medium heat for 10-15 minutes, turning and basting frequently, until the glaze is sticky and slightly caramelized. Alternatively, broil in the oven for 5-7 minutes, watching carefully to prevent burning, until the glaze is bubbling and slightly charred.

Notes

For an extra smoky flavor, consider adding a pinch of liquid smoke to the braising liquid. These ribs are also fantastic made a day ahead and reheated gently before glazing and finishing.
