Description

A unique and tangy homemade bread bursting with savory dill pickle flavor, perfect for sandwiches or as a delicious side dish.


Ingredients

2 cups all-purpose flour
1 cup dill pickles, finely chopped (plus extra for garnish)
1/2 cup pickle juice
1/4 cup sugar
1/4 cup vegetable oil
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon dried dill weed
2 large eggs


Instructions

Step 1: Preheat your oven to 350°F (175°C).
Step 2: Grease a 9x5-inch loaf pan or line it with parchment paper for effortless removal.
Step 3: In a large mixing bowl, whisk together the pickle juice, sugar, vegetable oil, and eggs until they are thoroughly combined and smooth.
Step 4: In a separate medium bowl, combine the all-purpose flour, baking powder, baking soda, salt, and dried dill weed. Whisk until evenly distributed.
Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are perfectly fine!
Step 6: Gently fold in the finely chopped dill pickles into the batter. Ensure they are evenly distributed throughout for flavor in every slice.
Step 7: Pour the prepared batter into your greased (or parchment-lined) loaf pan and smooth the top. If you like, sprinkle a few extra chopped dill pickles on top for a pretty garnish.
Step 8: Bake in the preheated oven for 50-60 minutes, or until a wooden skewer or toothpick inserted into the center of the loaf comes out clean.
Step 9: Remove the baked bread from the oven and let it cool in the pan for about 10 minutes. This helps it firm up before you move it.
Step 10: Carefully transfer the loaf from the pan to a wire rack to cool completely. Patience is a virtue here; fully cooled bread slices much better!
Step 11: Once cooled, slice your fantastic Dill Pickle Bread and serve it fresh, toasted, or however your heart desires!

Notes

For an extra cheesy kick, add 1/2 to 1 cup of shredded sharp cheddar cheese with the chopped pickles before baking.
