Ingredients
1/2 cup creamy peanut butter
1/2 cup full-fat coconut milk
1-2 tablespoons Thai red curry paste (depending on spice preference)
1 tablespoon soy sauce or tamari
1 tablespoon fresh lime juice
1 tablespoon maple syrup or brown sugar
1 teaspoon ginger, grated
1 clove garlic, minced
1-2 tablespoons warm water (to thin if needed)
Instructions
Step 1: In a medium mixing bowl, combine the peanut butter and the Thai red curry paste. Use a whisk to blend them into a thick paste.
Step 2: Gradually pour in the coconut milk while whisking continuously. The mixture will initially look separated but will become smooth with persistent whisking.
Step 3: Add the soy sauce, lime juice, maple syrup, grated ginger, and minced garlic to the bowl.
Step 4: Continue whisking until all ingredients are fully incorporated and the sauce is creamy and glossy.
Step 5: Taste the sauce and adjust the seasoning. Add more lime for acidity, more syrup for sweetness, or more curry paste for heat.
Step 6: If the sauce is too thick for your liking, whisk in warm water one tablespoon at a time until the desired consistency is achieved.
Step 7: Transfer the sauce to a serving bowl or an airtight container for storage.
Notes
For a keto-friendly version, replace the maple syrup with a liquid monk fruit sweetener. Store in the fridge for up to 7 days.
