- 1 ½ lbs sirloin steak, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 lb baby gold potatoes or Yukon Gold, cut into 1-inch chunks
- Optional: red pepper flakes, lemon zest, grated Parmesan
Instructions
- Preheat air fryer to 400°F (200°C) for 3 minutes.
- In a bowl, toss steak cubes with olive oil, salt, pepper, garlic powder, and smoked paprika until evenly coated.
- Place potatoes in a bowl; toss with olive oil, salt, pepper, and optional herbs; parboil for 5 minutes if desired.
- Air fry potatoes at 400°F for 10–12 minutes, shaking halfway through.
- Add seasoned steak bites to potatoes in the basket in a single layer; cook both for 8–10 minutes, shaking halfway.
- While cooking, mix melted butter, minced garlic, and chopped parsley in a small bowl.
- Transfer cooked steak and potatoes to a serving bowl; immediately drizzle with garlic butter and toss gently to coat.
- Serve hot, optionally garnished with extra parsley or Parmesan.
Notes
Bring steak to room temperature before cooking for even doneness. Pat steak dry to improve searing. Avoid overcrowding air fryer basket for best crispiness. Parboiling potatoes is optional but helps achieve tender interior. Reheat leftovers in air fryer for best texture.
