Ingredients
1.5 cups whole milk
3 oz high-quality dark chocolate (70% cocoa), finely chopped
2 tablespoons unsweetened Dutch-process cocoa powder
2 tablespoons granulated sugar
1.5 teaspoons cornstarch
1 pinch sea salt
Instructions
Step 1: In a small bowl, sift and whisk together the cocoa powder, sugar, and cornstarch until perfectly combined.
Step 2: Pour the whole milk into a small saucepan and heat over medium-low heat until it begins to steam but not boil.
Step 3: Gradually whisk the cocoa and cornstarch mixture into the warm milk, stirring constantly to avoid any lumps.
Step 4: Add the finely chopped dark chocolate and salt, continuing to whisk as the chocolate melts into the liquid.
Step 5: Keep whisking over medium-low heat for about 2-3 minutes as the mixture begins to simmer and thicken into a pudding-like consistency.
Step 6: Remove from heat once the desired thickness is reached and serve immediately in small mugs.
