16 oz cavatappi pasta
16 oz Colby Jack cheese, shredded
8 oz mozzarella cheese, shredded
8 oz sharp cheddar cheese, shredded
1 teaspoon smoked paprika
1 teaspoon garlic powder
3 tablespoons salted butter
1 can (12 oz) evaporated milk
2 cups heavy cream
1 tablespoon Dijon mustard
Salt and freshly ground black pepper to taste


Instructions

Step 1: Cook the cavatappi pasta according to package directions until al dente. Drain well and set aside.
Step 2: While the pasta cooks, prepare the cheese sauce. In a large saucepan or Dutch oven, melt the salted butter over medium heat. Stir in the smoked paprika and garlic powder and cook for 1 minute until fragrant.
Step 3: Slowly whisk in the evaporated milk, heavy cream, and Dijon mustard. Bring the mixture to a gentle simmer, stirring occasionally. Do not boil.
Step 4: Reduce the heat to low. Gradually add the shredded Colby Jack, mozzarella, and sharp cheddar cheeses, a handful at a time, stirring continuously until each addition is fully melted and the sauce is smooth and creamy. Season with salt and freshly ground black pepper to taste.
Step 5: Add the drained cavatappi pasta to the cheese sauce and stir gently to ensure all the pasta is evenly coated.
Step 6: Serve immediately, or for a baked version, transfer the mac and cheese to a greased 9x13 inch baking dish. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes, or until bubbly and golden brown on top. Let cool for a few minutes before serving.

Notes

For the best texture and melt, always shred your own cheese from blocks instead of using pre-shredded varieties. You can adjust the amount of smoked paprika to your preference. A pinch of cayenne pepper can be added for a subtle kick.
