Ingredients
2 cups all-purpose flour
1 cup ground roasted pistachios
1.5 cups granulated sugar
1 cup full-fat coconut milk
3 large eggs
1/2 cup butter, softened
1/2 cup crushed pineapple, drained
1 tsp vanilla extract
1 tsp coconut extract
2 tsp baking powder
1/2 tsp salt
8 oz cream cheese (for frosting)
4 cups powdered sugar (for frosting)
Instructions
Step 1: Preheat oven to 350°F and grease two 8-inch cake pans.
Step 2: Mix flour, ground pistachios, baking powder, and salt in a bowl.
Step 3: Cream butter and sugar until light and fluffy, then beat in eggs and extracts.
Step 4: Add dry ingredients and coconut milk alternately to the butter mixture.
Step 5: Fold in the drained crushed pineapple gently.
Step 6: Pour into pans and bake for 30-35 minutes until a tester comes out clean.
Step 7: Cool completely and frost with a blend of cream cheese, butter, and powdered sugar.
