A delightful fall dish combining sweet butternut squash and crisp apples with warm spices, perfect as a side or cozy dessert.
Ingredients
1 medium butternut squash (3-4 lbs), peeled, seeded, cut into 1-inch cubes
2-3 medium apples (Honeycrisp, Fuji, or Granny Smith), peeled, cored, cut into 1-inch chunks
1/4 cup (packed) brown sugar
1/4 cup (1/2 stick) unsalted butter, melted
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Pinch of salt
Instructions
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
Step 2: In a large mixing bowl, combine the cubed butternut squash and apple chunks.
Step 3: In a small bowl, whisk together the melted butter, brown sugar, cinnamon, nutmeg, and a pinch of salt until well combined.
Step 4: Pour the butter-sugar mixture over the squash and apples. Toss gently until all the pieces are evenly coated.
Step 5: Spread the coated squash and apples into the prepared baking dish in an even layer.
Step 6: Cover the baking dish tightly with aluminum foil. Bake for 30 minutes.
Step 7: Remove the foil and continue baking for another 20-30 minutes, or until the squash is tender and the apples are soft, and the edges are lightly caramelized. Stir halfway through this uncovered baking time for even browning.
Step 8: Remove from the oven and serve warm.
Notes
For an extra layer of texture, consider sprinkling a mix of chopped pecans or walnuts with a tablespoon of brown sugar and a pat of butter over the top during the last 15 minutes of baking.
