Ingredients
1 pound ground beef (80/20 lean recommended)
1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
Salt to taste
8 medium (8-inch) flour tortillas
2 cups shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
For the Zesty Burger Sauce:
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 tablespoon finely minced dill pickle (or relish)
1 teaspoon apple cider vinegar
1/2 teaspoon sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Pinch of cayenne pepper (optional)
Instructions
Step 1: Prepare the Zesty Burger Sauce. In a small bowl, whisk together mayonnaise, ketchup, yellow mustard, minced dill pickle, apple cider vinegar, sugar, garlic powder, onion powder, and cayenne pepper (if using). Taste and adjust seasonings as needed. Set aside.
Step 2: Cook the ground beef. Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking it apart with a spoon. Season with garlic powder, onion powder, paprika, black pepper, and salt. Cook until the beef is fully browned and no longer pink, about 6-8 minutes. Drain any excess grease.
Step 3: Assemble the quesadillas. Wipe the skillet clean (or use a separate, clean skillet) and place it over medium heat. Lay one tortilla flat in the dry skillet. Sprinkle about 1/4 cup of cheddar cheese evenly over one half of the tortilla. Spoon a generous amount of the cooked ground beef (about 1/4 cup) over the cheese.
Step 4: Add more cheese. Sprinkle another 1/4 cup of Monterey Jack cheese over the beef. Fold the other half of the tortilla over the filling to create a crescent shape.
Step 5: Cook the quesadilla. Cook for 2-3 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is melted and bubbly. Carefully remove the quesadilla from the skillet.
Step 6: Repeat and serve. Repeat steps 3-5 with the remaining tortillas, beef, and cheese. Slice each quesadilla into wedges and serve immediately with the prepared Zesty Burger Sauce for dipping. Enjoy!
Notes
Feel free to add other burger toppings like diced pickles, caramelized onions, or a sprinkle of fresh cilantro to the filling before cooking. For a spicier kick, add a dash of your favorite hot sauce to the burger sauce.
