1 ½ cups all-purpose flour
2 tablespoons granulated sugar
2 teaspoons baking powder
½ teaspoon salt
1 ¼ cups milk
1 large egg
2 tablespoons melted unsalted butter, plus more for cooking
8 slices bacon
4 large eggs
4 slices cheddar cheese (or your favorite melting cheese)
Maple syrup, for serving


Instructions

Step 1: In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt. In a separate medium bowl, whisk together the milk, egg, and melted butter.
Step 2: Pour the wet ingredients into the dry ingredients. Whisk until just combined. A few lumps are okay; do not overmix. Let the batter rest for 5-10 minutes.
Step 3: Cook the bacon: In a large skillet or frying pan, cook the bacon over medium heat until crispy. Remove bacon and place on a paper towel-lined plate to drain. Keep the bacon grease in the pan if desired for cooking eggs, or discard and wipe clean.
Step 4: Cook the pancakes: Heat a lightly buttered griddle or non-stick pan over medium heat. Pour about ¼ cup of batter for each pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. You will need 8 pancakes in total (2 per sandwich). Keep pancakes warm.
Step 5: Cook the eggs: In the same skillet (or a clean one), fry or scramble the 4 large eggs to your preference. A simple fried egg with a slightly runny yolk or a fully cooked scrambled egg works great. Season with salt and pepper.
Step 6: Assemble the sandwiches: Place one warm pancake on a plate. Top with a slice of cheese, a cooked egg, and 2 slices of crispy bacon. Top with a second warm pancake.
Step 7: Serve immediately with a generous drizzle of maple syrup.

Notes

For best results, keep the pancakes warm in a low oven (around 200°F/95°C) while you cook the eggs and bacon. Feel free to add a sprinkle of black pepper on the eggs for an extra savory kick. For a quick hack, use pre-cooked bacon and a microwaveable pancake mix.
