Ingredients
8 oz cream cheese, softened
3.4 oz instant cheesecake pudding mix
1 cup milk
8 oz whipped topping, thawed (like Cool Whip)
3 cups fresh strawberries, hulled and sliced
1 ½ cups mini marshmallows
½ cup powdered sugar
1 tsp vanilla extract
Instructions
Step 1: Beat the softened cream cheese in a large mixing bowl with an electric mixer on medium speed until completely smooth and lump-free.
Step 2: Add ½ cup of powdered sugar and 1 tsp of vanilla extract to the cream cheese. Continue beating until fully incorporated.
Step 3: In a separate bowl, whisk together the cheesecake pudding mix and 1 cup milk. Let the mixture stand for a few minutes until it thickens.
Step 4: Fold the thickened pudding mixture into the cream cheese base using a rubber spatula or spoon until completely combined and creamy. Do not overmix.
Step 5: Gently fold in the 8 oz thawed whipped topping until no streaks remain.
Step 6: Carefully fold in the 3 cups of sliced strawberries and 1 ½ cups of mini marshmallows. Ensure strawberries are patted dry before adding.
Step 7: Refrigerate the mixture for at least one hour before serving to allow the flavors to meld and the fluff to firm up.
