Ingredients
1/2 cup unsalted butter, melted (divided)
1/2 cup light brown sugar
2-3 ripe but firm bananas, sliced for topping
1.5 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 tsp ground cinnamon
3 large overripe bananas, mashed
3/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1/4 cup sour cream
Instructions
Step 1: Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
Step 2: Combine 1/4 cup melted butter and brown sugar; pour into the bottom of the pan.
Step 3: Arrange banana slices in a single layer over the sugar mixture.
Step 4: Whisk flour, baking soda, salt, and cinnamon in a large bowl.
Step 5: In another bowl, mix mashed bananas, remaining 1/4 cup butter, granulated sugar, egg, vanilla, and sour cream.
Step 6: Fold dry ingredients into wet until just combined.
Step 7: Pour batter over the banana layer and bake for 45-55 minutes.
Step 8: Cool for 10 minutes, then invert onto a serving plate.
Notes
Ensure bananas for the topping are not too soft so they keep their shape. Use a solid bottom pan to prevent caramel leakage.
