Description

A sophisticated, soft, and buttery sugar cookie infused with real vanilla bean seeds and topped with a creamy vanilla bean buttercream.


Ingredients

Scale

2 and 1/4 cups (281g) all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup (170g) unsalted butter, softened to room temperature
3/4 cup (150g) granulated sugar
seeds scraped from 1 whole vanilla bean
1 large egg, at room temperature
2 teaspoons pure vanilla extract
3/4 cup (170g) unsalted butter, softened (for buttercream)
seeds scraped from 1/2 of a vanilla bean (for buttercream)
3 cups (360g) confectioners’ sugar, sifted
3 Tablespoons (45ml) heavy cream
1 and 1/2 teaspoons pure vanilla extract (for buttercream)
salt to taste
optional: gel food coloring
optional: sprinkles


Instructions

Step 1: Whisk the flour, baking powder, and salt together in a medium bowl and set aside.
Step 2: In a large bowl using a handheld or stand mixer fitted with a paddle attachment, beat the butter and sugar together on medium-high speed until completely smooth and creamy.
Step 3: Add the vanilla bean seeds, egg, and vanilla extract and beat on high speed until combined, about 1 minute.
Step 4: Add the dry ingredients to the wet ingredients and mix on low until combined.
Step 5: Divide dough into two equal parts, wrap in plastic, and chill for at least 2 hours.
Step 6: Preheat oven to 350°F (177°C). Roll out dough to 1/4 inch thickness and cut into shamrock shapes.
Step 7: Bake for 10-12 minutes until the edges are very lightly browned, then cool completely.
Step 8: Beat buttercream ingredients together until fluffy, tint with green gel food coloring, and frost cooled cookies.

Notes

Ensure the dough is properly chilled to maintain the shamrock shape. Use high-quality butter for the richest flavor.
