Ingredients
20 frozen dumplings (pork or chicken)
1 can (13.5 oz) full-fat coconut milk
3 tablespoons red curry paste
1 tablespoon vegetable oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup fresh cilantro, chopped
1 lime, cut into wedges
Instructions
Step 1: Preheat your oven to 400°F and lightly coat a 9x13 inch baking dish with vegetable oil.
Step 2: In a bowl, whisk together the coconut milk and red curry paste until the paste is fully dissolved and the mixture is smooth.
Step 3: Place the frozen dumplings in the baking dish in a single layer.
Step 4: Pour the red curry coconut mixture over the dumplings, ensuring the liquid reaches halfway up the sides of the dumplings.
Step 5: Sprinkle with salt and pepper, then bake for 22-25 minutes until the sauce is thick and bubbling.
Step 6: Let the dish stand for 5 minutes before garnishing with fresh cilantro and serving with lime wedges.
Notes
Use full-fat coconut milk for the best sauce consistency. Serve over jasmine rice for a complete meal.
