Description
A delightful autumn salad featuring warm, tender pears, crunchy toasted walnuts, pungent blue cheese, and fresh mixed greens tossed in a simple balsamic vinaigrette.
Ingredients
2 ripe but firm pears, cored and sliced
1/2 cup walnuts, toasted
1/2 cup crumbled blue cheese
4 cups mixed greens (such as spring mix or arugula)
1/4 cup good quality balsamic vinegar
1/4 cup extra virgin olive oil
1 tsp fine sea salt
1/2 tsp freshly ground black pepper
Optional: Fresh mint leaves for garnish
Optional: A drizzle of honey for garnish
Instructions
Step 1: Prepare the Salad Base. In a large serving bowl, gently combine the mixed greens, toasted walnuts, and crumbled blue cheese. Set aside.
Step 2: Warm the Pears. Heat a non-stick skillet over medium heat. Add the sliced pears and cook for 2-3 minutes per side, until slightly softened and lightly caramelized. Be careful not to overcrowd the pan; cook in batches if necessary.
Step 3: Make the Dressing. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and black pepper until well combined. Taste and adjust seasoning as needed.
Step 4: Assemble and Serve. Add the warm pear slices to the serving bowl with the greens mixture. Drizzle the dressing evenly over the salad. Gently toss to coat all ingredients.
Step 5: Garnish and Enjoy. Garnish with fresh mint leaves and a drizzle of honey if desired. Serve immediately while the pears are still warm.
Notes
For an extra layer of flavor, try lightly candying the walnuts with a touch of sugar and butter before adding them to the salad. You can also add dried cranberries or figs for a chewy texture and extra sweetness.
