Description

A moist, aromatic cake filled with the deep sweetness of Medjool dates and topped with a bright, citrusy orange glaze.


Ingredients

1.5 cups Medjool dates, pitted and chopped
1 cup boiling water
1 teaspoon baking soda
1.75 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1.5 teaspoons ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
1/2 cup unsalted butter, softened
3/4 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
1 tablespoon orange zest
1 cup powdered sugar
2-3 tablespoons fresh orange juice


Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
Step 2: In a small bowl, combine chopped dates, boiling water, and baking soda. Let sit for 15 minutes until softened, then mash slightly with a fork.
Step 3: In a medium bowl, whisk together flour, baking powder, salt, cinnamon, ginger, and cloves.
Step 4: In a large bowl, cream the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, followed by the vanilla extract and orange zest.
Step 5: Gradually add the dry ingredients to the butter mixture, alternating with the soaked date mixture, beginning and ending with the dry ingredients.
Step 6: Pour the batter into the prepared pan and bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: To make the glaze, whisk powdered sugar and orange juice together until smooth. Drizzle over the warm spiced date cake with orange glaze before serving.

Notes

Ensure the dates are well-soaked for a smoother texture. You can also add walnuts for a crunchy variation.
