Ingredients
1 lb fresh strawberries, hulled and quartered
1 tbsp balsamic glaze
1 tbsp olive oil, plus more for garnish
8 oz block feta cheese, crumbled (preferably Greek, in brine)
4 oz cream cheese, softened
1 tbsp fresh lemon juice
1/4 tsp black pepper
Fresh oregano or mint, for garnish (optional)
Crusty bread or pita chips, for serving
Instructions
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: In a medium bowl, combine the hulled and quartered strawberries with the balsamic glaze and 1 tbsp of olive oil. Toss gently to coat.
Step 3: Spread the strawberries in a single layer on the prepared baking sheet. Roast for 15-20 minutes, or until softened and slightly caramelized, stirring gently halfway through. Remove from the oven and let cool slightly.
Step 4: While the strawberries are roasting, prepare the whipped feta. In a food processor, combine the crumbled feta cheese, softened cream cheese, fresh lemon juice, and black pepper.
Step 5: Process until the mixture is smooth and creamy, scraping down the sides as needed to ensure everything is well combined. This may take 2-3 minutes.
Step 6: Transfer the whipped feta to a serving bowl. Top generously with the slightly cooled roasted strawberries and their juices.
Step 7: Drizzle with a little extra olive oil and garnish with fresh oregano or mint, if desired. Serve immediately with crusty bread, pita chips, or crackers.
Notes
For the best flavor, use ripe, in-season strawberries. Greek block feta in brine yields the creamiest results. Adjust balsamic glaze to your sweetness preference.
