Transform ordinary liquid honey into a luxurious, spreadable, marshmallow-like treat with this simple whipping method.
Ingredients
2 cups high-quality raw liquid honey
1/4 cup crystallized 'seed' honey (finely granulated)
Optional: 1 tsp ground cinnamon or 1 vanilla bean, scraped
Instructions
Step 1: Pour the liquid honey and the crystallized seed honey into the bowl of a stand mixer fitted with the whisk attachment.
Step 2: Turn the mixer to a low speed for 1 minute to incorporate the seed honey into the liquid base without splashing.
Step 3: Increase the speed to medium-high and whip for 15-20 minutes. The honey will gradually turn from golden to an opaque, creamy white.
Step 4: Stop the mixer once the honey has reached a thick, spreadable consistency that holds its shape on the whisk.
Step 5: Transfer the whipped honey into clean glass jars and let it rest in a cool, dark place for 24 hours to set its structure completely.
Notes
Store at room temperature (approx 65-70°F) for the best spreadable consistency. If it gets too hard, warm slightly; if too soft, chill briefly.
