Description

An incredibly easy, no-bake treat featuring creamy peanut butter sandwiched between salty Ritz crackers and generously dipped in sweet white chocolate, perfect for any occasion.


Ingredients

48 Ritz crackers
1 cup creamy peanut butter
12 oz white chocolate (chips, melting wafers, or almond bark)
Sprinkles (optional)
Crushed candy canes (optional)
Drizzle of milk or dark chocolate (optional)


Instructions

Step 1: Lay out 24 Ritz crackers on a parchment-lined baking sheet. Spread about 1 tablespoon of creamy peanut butter onto each of these crackers.
Step 2: Top each peanut butter-covered cracker with another Ritz cracker, creating 24 peanut butter sandwiches. Gently press them together.
Step 3: In a microwave-safe bowl, melt the white chocolate. Heat in 30-second intervals, stirring well after each, until smooth and fully melted. Alternatively, use a double boiler for melting.
Step 4: Dip each peanut butter Ritz sandwich into the melted white chocolate, ensuring it's fully coated. Let any excess chocolate drip off.
Step 5: Place the dipped bites back on the parchment-lined baking sheet. If desired, immediately sprinkle with your chosen toppings like sprinkles or crushed candy canes, or prepare for a chocolate drizzle.
Step 6: If adding a chocolate drizzle, melt a small amount of milk or dark chocolate and use a spoon or piping bag to drizzle over the hardened white chocolate.
Step 7: Chill the bites in the refrigerator for at least 30 minutes, or until the white chocolate has completely set. Store in an airtight container in the refrigerator.

Notes

Ensure your white chocolate is not overheated during melting to prevent it from seizing. For best results, allow the bites to chill completely so the chocolate coating is firm. These make excellent gifts when packaged nicely!
